Brendan’s Chilli Sauce

Our Barman and Bingo star, Brendan will spice up your Autumn with his Chilli Sauce recipe.


  • 1 cup of birdseye chilli. 250 grams.
  • diced tomatoes (out of the can is fine)
  • 1/4 cup white sugar
  • 1/3 cup apple cider vinegar
  • pinch of salt


  • Roughly chopped Birdseye chilli. Leave in the seeds for more heat. You can use other chillies if that’s your preference. I recommend use of gloves for chopping!
  • Combine all ingredients in a saucepan over high heat. Bring to the boil stirring constantly.
  • Reduce heat to medium. Simmer, stirring on occasion for 10 minutes or until sauce thickens. Let stand for 10 minutes.
  • Strain sauce through a sieve forcing pulp through as much as possible.
  • Return strained sauce to saucepan and stir while reheating.
  • Sauce will refrigerate for up to 3 weeks and is great on steak!
